Luke Mills has opened Sprout & Crumb at 85 North Street, bringing with him years of culinary expertise, a passion for food and a commitment to using locally sourced ingredients.
The new deli is already attracting attention for its fresh salads, homemade dishes, artisan coffee and sweet treats, with Luke determined to create a food offering that evolves around the tastes and feedback of his customers.
Luke has built an impressive career working alongside Michelin-starred chefs including Herbert Berger at Lombard Street in London and Tessa Bramley at The Old Vicarage in Sheffield.
He also spent seven years as menu development chef at Filmore & Union, as well as gaining international experience at the Light Brigade Restaurant in Woollahra, New South Wales, Australia.

But despite his extensive experience, Luke believes the most important ingredient in his business is not something found in a kitchen.
"For me, the most important ingredients are the customers, because their feedback helps me to create customised dishes which add to an ever-evolving choice, rather than just offering a set menu.
"I'm open to suggestions and if I get asked to introduce a new dish to meet a particular taste, I will give it a go."
Luke's aim is to provide wholesome and nutritious takeaway food while supporting other independent businesses and producers wherever possible.
The menu includes locally sourced products such as sweet treats made by Leah Wright at The Wright Cake Bakery in Northallerton, which sit alongside artisan filter coffee roasted by Lonton Coffee in Teesdale.
The business is very much a family affair.
Luke's wife Lucy runs The Sprouted Kitchen in Bedale and L Bar coffee shop at Leeming Bar, while the couple also juggle running their businesses with family life and their two sons, Drew, 10, a budding cricketer, and creative eight-year-old Jax.
The family has quickly fallen in love with Ripon and believes the cathedral city has plenty of potential.
Luke said: "We have been welcomed with open arms by local residents, visitors and other independent business owners and it is clear that there is a real community feel here and a buzz on the streets."
The arrival of Sprout & Crumb has also been welcomed by neighbouring businesses.
Sarita McDermott, owner of Realitea Indian Tearoom and Bistro next door, said she was delighted to see the new deli become part of Ripon's independent scene.
She said: "We're delighted to welcome this lovely new addition to our local community — a lunchtime deli serving up fresh, healthy salads and tasty options to brighten up your lunch break.
"Why not pop in, say hello and explore what they have to offer?
“Remember shopping totally locally really is the way to go.
"We encourage everyone to keep supporting all our wonderful independent businesses.
“Help Ripon be vibrant, and our high street to thrive."
Lilla Bathurst, Manager at Ripon BID, also believes Luke's arrival adds to the city's growing food and drink offering.
She said: "Luke brings a wealth of experience to Ripon and the skills he has learnt in award-winning kitchens adds to the choice that the city's food and drink sector offers visitors and local residents alike."
Sprout & Crumb is open from 11am till 3pm on Tuesdays and 10am till 3pm from Wednesday to Saturday.
