A main course dish designed by a Harrogate catering student will be served at a prestigious banquet after his creation came out top in a college chef competition.
Frazer Coulby’s belly pork dish will now go before more than 700 guests at Harrogate International Centre (HIC Yorkshire) as the venue hosts BP2015 – a major exhibition for the British potato industry taking place next month.
Frazer, 28, and fellow Harrogate College students were tasked with creating a dish which celebrated the ‘great British potato’.
Frazer said: “My potato inspiration was bubble n’ squeak, a great British dish using Maris Piper potato with butter, cream, salt and pepper to give a superb mash complemented with Savoy cabbage.
“The Bubble n’ squeak was paired with Belly pork which is in fashion at the moment and it’s lovely with the crackling and a glaze on top.
“I’m really happy to have won and am really looking forward to the night itself now.”
Competition judge Philip Johnson, of Kudos catering, is HIC Yorkshire’s head chef and will be overseeing the preparation of Frazer’s dish at the banquet.
He said: “When I tasted his dish today it was very much in-line with how we like to do things at HIC Yorkshire.
“He’s certainly switched on when thinking about movement on the plate and ease of serve.
“The presentation was great and it was a very colourful plate.”
The BP2015 show is a major industry event which showcases the latest technology and science in the whole potato supply chain. The exhibition will take over HIC Yorkshire’s event halls for two days. The banquet is hosted by AHDB Potatoes.
